Welcome to My Delicious Low Sodium, No Casein World
I'm supposed to be on a very-low sodium diet, and I'm usually very good about it. I also have an extreme allergy to casein, the protein found in milk. Nevertheless, I live in the real world, and sometimes you just have to adapt.
I do a lot of cooking from scratch, using other flavors to bump up what is already there. I also use things that have sodium, but I find a way to cut it to an acceptable level for occasional treats.
Along the way, I cook some very good food, I read recipes, food articles and cookbooks for relaxation. I enjoy finding ways to eat yummy food at good places without making the food more important than my health. I've heard Bobby Flay say something that I found quite offensive, though I've become a fan again. He was talking about adding salt to a recipe, and his comment was something like, "...something's gonna kill you anyway, so salt your food and enjoy it." The incredible ignorance of such a statement threw me into shock. It isn't about killing you so much as it's about having an acceptable quality of life while I'm still here.
I was raised to have a very eclectic palate. I enjoy world cuisine, whether European, Asian, Mexican, Spanish....I love food, and I'll try almost anything. I'm quite aware of the irony in loving Dungeness crab and gagging at the thought of eating insects or spiders. But I try to keep food interesting, even in the face of a badly stocked kitchen, a very limited budget, and two family members who can't or won't eat what I eat.
This blog will be about the trials and travails I endure on my dietary path, and share the triumphs as I find quick, easy, cheap ways to adapt to the rest of the world. Come back and share in the adventure
