Mango Chicken Curry
I absolutely love this recipe. It is light and tasty, Enjoy
Ingreedients
150 grams fresh snow peas
2 large cans of sliced mangoes drained
2 medium zucchini's
1 Bottle of butter chicken sauce any brand
I tablespoon of mild curry powder
1 small can of light coconut cream
500g of skinless chicken breast
Method
1. Slice chicken breast into medium cubes
2. Wash and slice ends off snow peas, slice zucchini into long strips and halve.
3. Heat large frying pan on medium heat
4. Place chicken into frying pan and seal outside of meat
5. Once chicken is sealed place snow peas and zucchini into frying pan.
6. Sprinkle curry powder over chicken and vegies
7. Once chicken is cooked through, place drained mangos into frying pan, followed by butter chicken mix, cook on low heat for around 15 mins.
8. The last step is to add the coconut cream, stir until combined evenly and simmer on low heat for another 20 minutes.
Best served with Jasmine Rice.
